Fries

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips or wedges, depending on your preference.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This will help achieve a crispier texture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the potatoes and pat them dry with a clean towel. Carefully add them to the hot oil in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes.

Season the Fries
Remove the fries from the oil and place them on paper towels to drain excess oil. Sprinkle with salt while they are still hot.
Cheese Sauce

Soak the Cashews
Soak the cashews in water for at least 2 hours, or boil them for 10 minutes if short on time.

Blend the Sauce
In a blender, combine the soaked cashews, nutritional yeast, almond milk, garlic powder, onion powder, turmeric, salt, and lemon juice. Blend until smooth and creamy.

Heat the Sauce
Pour the blended mixture into a saucepan and heat over medium-low heat, stirring frequently until warmed through. Adjust seasoning if necessary.
