Method

Bun Preparation

  1. 1

    Activate Yeast

In a small bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until frothy.

  2. 2

    Make Dough

In a large mixing bowl, combine flour, salt, and baking powder. Add the activated yeast mixture and vegetable oil. Mix until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

  4. 4

    Shape Buns

After rising, punch down the dough and divide it into 4 equal pieces. Shape each piece into a bun and place on a parchment-lined steamer basket.

  5. 5

    Steam Buns

Cover the buns with a damp cloth and let them rise for another 30 minutes. Then steam the buns over boiling water for about 15 minutes until fluffy.

Fried Chicken Preparation

  1. 6

    Marinate Chicken

In a bowl, combine buttermilk and chicken thighs. Cover and marinate in the refrigerator for at least 1 hour or overnight for best results.

  2. 7

    Prepare Coating

In a shallow dish, mix together flour, paprika, garlic powder, onion powder, salt, and black pepper.

  3. 8

    Coat Chicken

Remove the chicken from the buttermilk and let the excess drip off. Dredge each piece in the flour mixture until fully coated.

  4. 9

    Fry Chicken

In a large skillet, heat oil over medium-high heat. Once hot, add the chicken and fry for about 6-8 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Assembly

  1. 10

    Assemble Buns

Take a steamed bun, place a piece of fried chicken on it, and top with hot jam, horseradish, and dill pickle slices. Cover with the top bun.

  2. 11

    Serve

Enjoy your delicious fried chicken steam buns warm!
