Broth Preparation

    Cook the Bacon

    In a large pot over medium heat, cook the bacon slices until they are crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Make the Broth

    Add 4 cups of water to the pot with the rendered bacon fat. Stir in the dashi powder, soy sauce, and mirin. Bring to a simmer and allow the broth to cook for about 10 minutes to develop flavor.

Noodle Preparation

    Cook the Ramen Noodles

    In another pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Once cooked, drain and set aside.

Egg Preparation

    Soft Boil the Eggs

    In a small pot, bring water to a boil. Gently add the eggs and boil for 6-7 minutes for a soft yolk. Remove from heat, drain, and place the eggs in ice water to stop cooking. Once cooled, peel and cut in half.

Assembly

    Assemble the Ramen Bowl

    In a large bowl, add a serving of ramen noodles. Pour the hot bacon dashi broth over the noodles. Top with soft-boiled egg halves, pickled vegetables, kimchi, chopped cilantro, sliced scallions, and a sprinkle of sesame seeds.

    Serve immediately while hot, enjoying the various flavors and textures of the bacon dashi ramen.
