    Marinate the Salmon

    In a mixing bowl, combine the brown sugar, sea salt, black pepper, lemon juice, and olive oil. Mix well until the sugar and salt dissolve. Place the salmon fillet in a shallow dish and pour the marinade over it, ensuring it is well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.

    Smoke the Salmon

    Preheat your smoker to 180°F (82°C). Remove the salmon from the marinade and rinse under cold water to remove excess sugar and salt. Pat dry with paper towels. Place the salmon in the smoker and smoke for about 30 minutes, or until it reaches an internal temperature of 140°F (60°C).

    Grill the Salmon

    Preheat your grill to medium heat. Lightly oil the grill grates. Once the salmon is done smoking, transfer it to the grill and cook for an additional 5-7 minutes on each side, or until it has nice grill marks and is cooked through.

Pommery Mustard Sauce

    Prepare the Sauce

    In a saucepan over medium heat, combine the Pommery mustard, heavy cream, honey, white wine vinegar, salt, and black pepper. Stir well and bring to a simmer. Cook for 5-7 minutes, stirring frequently until the sauce thickens slightly. Remove from heat and let cool slightly before serving.
