    Prep the Vegetables

    Dice the onion and bell pepper into small, even pieces.

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until they are soft and translucent, about 5-7 minutes.

    Prepare the Brisket Filling

    In a large bowl, combine the smoked brisket, sautéed vegetables, garlic powder, cumin, salt, and black pepper. Mix well until all ingredients are combined.

    Assemble the Quesadillas

    Lay one tortilla flat and spread about 1/2 cup of the brisket filling onto half of the tortilla. Sprinkle 1/4 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese over the filling. Fold the tortilla in half.

    Cook the Quesadillas

    In the same skillet used for the vegetables, add a little more olive oil if necessary and heat over medium heat. Place the quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

    Once cooked, remove from the skillet and let it cool for a minute. Cut the quesadilla into wedges and serve with sour cream and salsa.
