Prepare the filling
In a mixing bowl, combine the smoked brisket, sautéed onions, sautéed bell peppers, barbecue sauce, salt, and black pepper. Stir until well mixed.

Assemble the quesadillas
Lay a flour tortilla flat on a clean surface. Spread a portion of the brisket filling (about 1/2 cup) on one half of the tortilla. Top with 1/2 cup of shredded cheese. Fold the other half of the tortilla over the filling to create a half-moon shape.

Cook the quesadillas
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, place the folded quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy, then carefully flip and add the remaining tablespoon of olive oil. Cook for another 3-4 minutes on the other side.

Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve with sour cream and fresh cilantro on the side.
