Prepare the Pork Chops
Pat the pork chops dry with paper towels and season both sides with salt, black pepper, and garlic powder.

Sear the Pork Chops
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned pork chops and sear for 4-5 minutes on each side, or until a golden-brown crust forms and the internal temperature reaches 145°F (63°C). Remove from heat and let rest.

Make the Jalapeño Peach Jam
While the pork chops are resting, finely chop the jalapeños (remove seeds for less heat if desired). In a saucepan over medium heat, combine the jalapeños, peach preserves, apple cider vinegar, and fresh peaches. Stir together and bring to a simmer.

Cook the Jam
Let the mixture simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly. Remove from heat and let cool.

Top each pork chop with a generous spoonful of the jalapeño peach jam and serve immediately.
