Prepare Espresso
Brew 1 cup of strong espresso coffee and allow it to cool. Once cooled, stir in 1 tablespoon of granulated sugar until dissolved. Set aside.

Prepare Mascarpone Mixture
In a large mixing bowl, whisk together 3 egg yolks and 1/4 cup of granulated sugar until pale and creamy. Add 500g of mascarpone cheese and 1 tsp of vanilla extract, mixing until smooth and well combined.

Whip Cream
In a separate bowl, whip 1 cup of heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.

Soak Ladyfingers
Dip each ladyfinger into the cooled espresso mixture for about 1-2 seconds, ensuring they are soaked but not soggy.

Layering
In a rectangular dish, arrange a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers. Repeat the process with another layer of soaked ladyfingers followed by the remaining mascarpone mixture.

Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Before serving, dust the top with 2 tablespoons of cocoa powder. Cut into squares and serve chilled.
