Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

Rest the Steak
Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.
Fries Preparation

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips about 1/4 inch thick.

Soak the Potatoes
Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes. This removes excess starch and helps them become crispy.

Dry the Potatoes
Drain the potatoes and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a deep fryer or large heavy pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potatoes to the hot oil in batches, frying for about 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

While the fries are still hot, sprinkle with salt to taste.
