    Cook the Noodles

    Bring a large pot of salted water to a boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce

    In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Stir in the minced garlic and sliced mushrooms, cooking until mushrooms are tender.

    Add Wine and Sour Cream

    Pour in the red wine and bring to a simmer. Allow to reduce for about 5 minutes. Reduce heat to low, then stir in sour cream until well combined. Season with salt and black pepper to taste.

    Cook the Steak

    While the sauce simmers, season the flat iron steak with salt and black pepper. Grill or pan-sear to your desired doneness, about 4-5 minutes per side for medium-rare. Let rest for a few minutes before slicing.

    Toss the cooked egg noodles in the sauce until well coated. Serve on plates, topped with sliced steak and garnished with fresh scallions.
