    Prepare the Rice

    In a medium saucepan, combine 1 cup of white rice with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 18 minutes or until the water is absorbed. Fluff with a fork and keep warm.

    Make the Mandarin Salsa

    In a bowl, combine the mandarin oranges, diced red onion, chopped cilantro, and lime juice. Mix well and set aside.

    Cook the Pork Chop

    Season the pork chop with salt and black pepper. Preheat a grill or grill pan over medium-high heat and cook the pork chop for about 7-8 minutes per side, or until the internal temperature reaches 145°F (63°C). Brush with sriracha BBQ sauce during the last few minutes of cooking.

    Sauté the Broccoli

    In a skillet, heat olive oil over medium heat. Add the broccoli florets and sauté for about 5-6 minutes, or until tender yet crisp. Season with salt and pepper.

    Place a serving of seasoned rice on a plate, top with the grilled pork chop, and spoon the mandarin salsa over the top. Serve the sautéed broccoli on the side.
