    Prepare the Meatloaf

    In a large bowl, combine ground beef, bread crumbs, chopped onion, milk, egg, garlic powder, salt, and black pepper. Mix until well combined.

    Shape and Bake

    Transfer the meat mixture into a loaf pan and shape it into a loaf. In a small bowl, mix ketchup and brown sugar together, then spread it over the top of the meatloaf. Bake in a preheated oven at 350°F (175°C) for 1 hour, or until the internal temperature reaches 160°F (70°C).

    Prepare the Mashed Potatoes

    While the meatloaf is baking, wash and peel baby red potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and mash until creamy, seasoning with salt and pepper to taste.

    Cook Seasonal Vegetables

    Steam or sauté the seasonal vegetables of your choice until tender, about 5-7 minutes.

    Serve

    Once the meatloaf is cooked, let it rest for a few minutes before slicing. Serve with mashed potatoes and seasonal vegetables on the side.
