    Prepare the Ribeye

    Preheat the grill to medium-high heat. Brush the ribeye with olive oil and season generously with salt and black pepper.

    Grill the Steak

    Place the ribeye on the grill and cook for 4-5 minutes per side for medium-rare, or until your desired doneness is reached. Remove from the grill and let it rest for 5 minutes.

    Make the Mashed Redskins

    While the steak is resting, wash and chop the redskin potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth. Season with salt to taste.

    Prepare the Vegetables

    Sauté the seasonal vegetables in a pan with a little olive oil until tender, about 5-7 minutes.

    Serve

    Plate the ribeye alongside a generous serving of mashed redskin potatoes and sautéed seasonal vegetables. Optionally, top with sautéed mushrooms or Guinness-braised onions for an additional charge.
