Preparation of Filling

Prepare the Vegetables
In a large mixing bowl, combine shredded carrots, shredded cabbage, bean sprouts, and chopped green onions.

Season the Filling
Add soy sauce, sesame oil, salt, and black pepper to the vegetable mixture. Toss well to combine and set aside.
Assembling the Spring Rolls

Prepare the Work Area
Lay a clean kitchen towel on your work surface and place a spring roll wrapper on it, with one corner pointing toward you.

Fill the Wrapper
Spoon about 2 tablespoons of the filling mixture onto the lower third of the spring roll wrapper.

Roll the Wrapper
Fold the bottom corner over the filling, then fold the sides in tightly. Continue rolling until the top corner is reached. Seal the edge with a little water.
Frying the Spring Rolls

Heat the Oil
In a deep frying pan or wok, heat vegetable oil over medium-high heat until it reaches around 350°F (175°C).

Fry the Spring Rolls
Carefully place the spring rolls in the hot oil, a few at a time, and fry until they are golden brown, about 3-4 minutes. Turn them occasionally for even cooking.

Drain and Serve
Remove the spring rolls with a slotted spoon and drain on paper towels. Serve warm with dipping sauce of your choice.
