Method
Making the Broth

Prepare Ingredients
Rinse the beef bones under cold water to remove any impurities. Peel and halve the onions and ginger.

Combine Ingredients for Broth
In a large pot, add the beef bones, charred onions, ginger, star anise, cinnamon stick, cloves, water, fish sauce, salt, and sugar.

Simmer the Broth
Bring the mixture to a boil over high heat, then reduce to low heat and simmer for about 6-8 hours. Skim off any foam or impurities that surface.

Strain the Broth
Once simmered, strain the broth through a fine mesh sieve into another pot, discarding the solids. Keep the broth warm.
Preparing the Noodles

Cook the Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions until tender, usually about 5-7 minutes.

Drain and Rinse
Once cooked, drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
Assembling the Soup

Prepare Toppings
Thinly slice the beef if not already done. Rinse the bean sprouts and fresh herbs. Slice the lime and chili peppers.

Serve the Soup
In a bowl, place a portion of the cooked rice noodles, top with raw sliced beef, and ladle the hot broth over. The heat from the broth will cook the beef.

Garnish with bean sprouts, fresh basil, cilantro, lime wedges, sliced chili peppers, and green onions to taste.
