Prepare the Noodles
Soak the rice noodles in hot water for about 20-30 minutes until they are soft, then drain and set aside.

Prepare the Tofu
Press the tofu to remove excess moisture, then cut into small cubes.

Cook the Tofu
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and fry until golden brown, about 5-7 minutes. Remove the tofu and set aside.

Stir-fry Garlic
In the same pan, add another tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

Combine Ingredients
Add the soaked rice noodles, cooked tofu, bean sprouts, and green onions to the pan. Stir-fry for about 2-3 minutes.

Add Sauce
In a small bowl, mix together soy sauce, lime juice, brown sugar, and salt. Pour this sauce over the stir-fried mixture and toss to coat evenly.

Finish the Dish
Sprinkle crushed peanuts and chili powder over the top. Stir well and cook for another minute.

Serve hot, garnished with additional chopped green onions and lime wedges if desired.
