Preparing the Chicken Skewers

Cut the Chicken
Cut the chicken breast into bite-sized pieces (about 1 inch).

Marinate Chicken
In a bowl, combine soy sauce, lime juice, brown sugar, minced garlic, ground coriander, ground cumin, coconut milk, and salt. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Skewer the Chicken
Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
Making the Peanut Sauce

Combine Ingredients
In a small saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and Sriracha (if using).

Cook the Sauce
Stir the mixture continuously until smooth and heated through, about 5-7 minutes. Taste and adjust salt as necessary.

Remove from Heat
Once the sauce is well combined and warm, remove it from heat and set aside.
