Method

Preparing the Quinoa

    Cook the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Crisp the Quinoa

    Heat olive oil in a skillet over medium heat. Add the cooked quinoa and spread it out evenly. Season with salt. Cook for about 5-7 minutes, stirring occasionally, until the quinoa is crispy and golden brown.

Cooking the Eggs

    Fry the Eggs

    In a non-stick skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 2-3 minutes for sunnyside-up eggs.

Preparing the Salad

    Mix the Salad

    In a large bowl, combine mixed greens, diced cucumber, halved cherry tomatoes, and diced avocado. Drizzle with lemon juice and season with salt and pepper. Toss gently to combine.

Assembling the Dish

    Plate the Dish

    On a plate, layer the crispy quinoa, top with the sunnyside-up eggs, and serve alongside the green salad.
