Method

Grilling the Pork Chops

    Prepare the Pork Chops

    Rub the pork chops with olive oil, garlic powder, salt, and black pepper. Let them marinate for at least 30 minutes.

    Grill the Pork Chops

    Preheat the grill to medium-high heat. Grill the pork chops for about 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from grill and let rest.

Braised Greens

    Sauté the Onion

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.

    Cook the Greens

    Add collard greens, chicken broth, apple cider vinegar, salt, and pepper. Cover and simmer for about 30 minutes until greens are tender.

Cooking the Wheat Berries

    Prepare the Wheat Berries

    In a saucepan, combine wheat berries, water, and salt. Bring to a boil, then reduce heat and simmer for about 45-60 minutes until tender.

Making Hazelnut-Morita Romesco

    Blend Ingredients

    In a food processor, combine hazelnuts, morita peppers, garlic, tomato, olive oil, red wine vinegar, and salt. Blend until smooth. Adjust seasoning to taste.

Preparing Quince

    Cook the Quince

    Peel, core, and slice the quince. In a saucepan, combine quince slices, sugar, and water. Simmer until quince is tender and syrupy, about 20-25 minutes.
