Preparation of Sope Base

1. Make the Sope

In a bowl, mix heirloom corn masa with water and salt until a dough forms. Divide into small balls and flatten into discs. Cook on a hot griddle until golden brown on both sides.

Cooking Shrimp

In a bowl, combine shrimp, olive oil, garlic, lemon juice, salt, pepper, and paprika. Let marinate for 15 minutes. Preheat grill to medium-high heat and grill shrimp for 2-3 minutes on each side until cooked through.

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add chopped Swiss chard and cook until wilted, about 3-4 minutes.

In a pot, combine seafood stock, lemon zest, and fresh herbs. Bring to a simmer and cook for 10 minutes to allow the flavors to meld.

On each sope, layer sautéed Swiss chard, grilled shrimp, and drizzle with seafood broth. Serve immediately.
