    Prepare the Guajillo Chile Sauce

    Remove the stems and seeds from the guajillo chiles. Soak them in hot water for about 15 minutes until softened, then blend with 1 tablespoon of olive oil, salt, and pepper to make a smooth sauce.

    Sauté the Garlic

    Thinly slice the garlic cloves. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced garlic and sauté until golden brown and crispy, then remove and set aside.

    Sauté the Swiss Chard

    In the same skillet, add the chopped Swiss chard and sauté for about 5 minutes until wilted. Season with salt and pepper to taste.

    Grill the Trout

    Preheat the grill to medium-high heat. Season the trout fillets with salt, pepper, and a drizzle of olive oil. Grill the fillets for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

    Serve

    On a plate, serve the grilled trout topped with the guajillo chile sauce, the sautéed Swiss chard on the side, and sprinkle with the fried garlic. Garnish with lemon wedges.
