    Boil the Eggs

    Place the six large eggs in a pot and cover them with cold water, making sure the water is about an inch above the eggs. Bring to a boil over medium-high heat.

    Cook the Eggs

    Once the water reaches a rolling boil, cover the pot with a lid and turn off the heat. Let the eggs sit in the hot water for 9-12 minutes, depending on your desired doneness.

    Cool the Eggs

    After the time is up, carefully drain the hot water and transfer the eggs to a bowl of ice water. Let them cool for about 5-10 minutes.

Filling Preparation

    Peel the Eggs

    Once cooled, gently tap each egg on a hard surface and peel the shells off. Rinse under cold water to remove any shell fragments.

    Slice the Eggs

    Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl.

    Make the Filling

    To the bowl with the yolks, add 3 tablespoons of mayonnaise, 1 tablespoon of Dijon mustard, 1 teaspoon of apple cider vinegar, 0.5 teaspoon of salt, 0.25 teaspoon of black pepper, 0.5 teaspoon of paprika, 1 tablespoon of chopped fresh chives, and 1 teaspoon of Sriracha sauce. Mash together until smooth and well combined.

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the yolk mixture.

    Garnish the Eggs

    Sprinkle the filled eggs with paprika and top with additional chopped chives for garnish.
