Method

Preparing the Dough

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, salt, and sugar until well combined.

  2. 2

    Activate Yeast

In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until foamy.

  3. 3

    Combine and Knead

Make a well in the center of the dry ingredients and pour in the yeast mixture. Add melted unsalted butter and mix until a dough forms. Knead for 10 minutes on a floured surface until smooth.

  4. 4

    Let Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preparing the Filling

  1. 5

    Prepare Cream Cheese Filling

In a bowl, mix the cream cheese with powdered sugar until smooth. Set aside.

  2. 6

    Mix Fruit Filling

In a separate bowl, gently combine blueberries with cinnamon and set aside.

Assembling the Pastries

  1. 7

    Roll Out Dough

Once dough has risen, punch it down and roll it out on a floured surface to about ¼ inch thick.

  2. 8

    Cut and Fill

Cut the rolled dough into squares or circles. Place a spoonful of cream cheese filling in the center of half the pieces and a spoonful of blueberry filling in the center of the other half.

  3. 9

    Seal and Apply Egg Wash

Fold the pastry over to form a pocket, sealing the edges with a fork. Beat the egg with milk and brush the mixture over the pastries.

Baking the Pastries

  1. 10

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 11

    Bake

Place the pastries on a lined baking sheet and bake for 20-25 minutes, or until golden brown.
