Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk together until well combined.

    Cut in Butter

    Cut the unsalted butter into small cubes and add it to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Do not overmix.

    Chill Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.

Filling Preparation

    Prepare Filling

    In a small bowl, mix the fruit jam or preserves with cinnamon if using. Set aside.

Assemble Pop Tarts

    Roll Out Dough

    Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick.

    Cut Dough Shapes

    Using a sharp knife or a pastry cutter, cut the dough into rectangles, roughly 3x4 inches. You should have enough for 4 filled pop tarts.

    Fill the Tarts

    Place half of the rectangles on a baking sheet lined with parchment paper. Spoon about 1 tablespoon of the fruit filling onto the center of each rectangle, leaving a small border around the edges.

    Top with Dough

    Place the remaining rectangles over the filled ones and press the edges together to seal. You can crimp the edges with a fork for a decorative touch.

    Bake

    Bake in the preheated oven for 20-25 minutes or until the pop tarts are golden brown. Remove from oven and allow to cool slightly.

Icing Preparation

    Make Icing

    In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. If the icing is too thick, add a little more milk until you reach the desired consistency.

    Ice the Pop Tarts

    Once the pop tarts have cooled slightly, drizzle the icing over the top. Optionally, sprinkle with sprinkles for added decoration.
