Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6 oz ramekins with butter and dust with flour to prevent sticking.

Mixing Dry Ingredients

  1. 3

    Combine Dry Ingredients

In a mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.

Mixing Wet Ingredients

  1. 4

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.

  2. 5

    Whisk Eggs and Vanilla

In a separate bowl, whisk together the eggs, egg yolks, and vanilla extract until well combined.

Combine Mixtures

  1. 6

    Combine Wet and Dry Ingredients

Pour the melted chocolate mixture into the egg mixture and stir until well combined. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.

Baking

  1. 7

    Fill Ramekins

Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.

  2. 8

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should be soft.

  3. 9

    Cool Slightly

Remove the cakes from the oven and allow them to cool for 1-2 minutes. Carefully run a knife around the edges of each ramekin.

  4. 10

    Invert and Serve

Place a plate over each ramekin and invert to release the cake. Serve warm, optionally topped with powdered sugar, vanilla ice cream, and fresh berries.
