    Prepare the Filling

    In a large bowl, whisk together the eggs, milk, salt, and black pepper. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes. Add the crumbled sausage or bacon and cook until heated through.

    Cook the Eggs

    Pour the egg mixture into the skillet with the vegetables and meat. Cook, stirring gently, until the eggs are scrambled and fully cooked, about 5-7 minutes. Remove from heat and stir in chopped cilantro if using.

    Assemble the Burritos

    Lay a tortilla flat on a clean surface. Spoon a generous portion of the egg mixture onto the center of the tortilla, and sprinkle with shredded cheddar cheese. Fold in the sides of the tortilla and roll it up tightly from the bottom.

    Crispy Cheddar Crust

    In a clean skillet, heat a small amount of olive oil over medium heat. Place the burrito seam-side down in the skillet. Sprinkle some extra cheddar cheese on top and cook until the bottom is golden and crispy, about 2-3 minutes. Flip and cook the other side until crispy.

    Remove the burritos from the skillet, slice in half, and serve warm with your favorite salsa or hot sauce.
