    Prepare the Frites

    Peel the potatoes and cut them into thin strips. Rinse them in cold water to remove excess starch, then dry well.

    Fry the Potatoes

    In a large pot, heat oil over medium-high heat. Add the potatoes in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Drain on paper towels and season with salt.

    Prepare the Steak

    Season the steak generously with salt and black pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Cook the Steak

    In a large skillet over high heat, add olive oil. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, depending on the thickness. Remove from heat and let rest for 5 minutes.

    Make the Maître d'Hôtel Butter

    In a small bowl, mix together the softened butter, chopped parsley, minced garlic, lemon juice, and a pinch of salt. Shape into a log and refrigerate until firm.

    Serve

    Slice the steak against the grain and serve with frites on the side. Top the steak with a slice of the maître d'Hôtel butter.
