Prepare the celery root
Peel and dice the celery root into small cubes. Boil in salted water until tender, roughly 15-20 minutes, then drain and set aside.

Sear the pork chops
Season the pork chops with salt and black pepper. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the pork chops for about 4-5 minutes on each side until golden brown. Remove and set aside.

Combine and finish cooking
Return the seared pork chops to the skillet, nestling them into the sauerkraut mixture. Cover and simmer on low heat for about 15 minutes until the pork is cooked through.

Plate the pork chops with the sauerkraut mixture and serve alongside the confit potatoes and boiled celery root.
