    Prepare the Haricot Vert

    Trim the ends of the haricot vert and rinse them under cold water. Set aside.

    Make the Tarragon Butter

    In a small saucepan, melt the unsalted butter over low heat. Add the chopped tarragon and stir until well combined. Remove from heat and set aside.

    Fry the Shallots

    In a medium bowl, toss the sliced shallots with flour, salt, and pepper until well coated. Heat the vegetable oil in a frying pan over medium heat. Once hot, add the shallots and fry until golden brown and crispy, about 3-4 minutes. Remove the shallots with a slotted spoon and drain on paper towels.

    Blanch the Haricot Vert

    Bring a pot of salted water to a boil. Add the haricot vert and cook for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge into a bowl of ice water to stop cooking. Drain again and pat dry.

    Serve

    In a serving dish, arrange the haricot vert. Drizzle with the tarragon butter and top with crispy shallots. Serve warm.
