Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips to resemble frites. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

Fry the Potatoes
Drain the soaked potatoes and pat them dry with a kitchen towel. Carefully add the potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry until golden and crispy, about 4-5 minutes. Remove and drain on paper towels.

Season the Frites
While the frites are still hot, sprinkle with salt and toss to ensure even seasoning.

Add Cheese and Truffle
Grate the Parmigiano Reggiano over the hot frites. Use a truffle slicer or a sharp knife to shave the black truffle over the top to taste.

Transfer the frites to a serving platter and enjoy immediately while hot.
