    Prepare the Beet Aioli

    In a small bowl, combine the pureed beetroot, mayonnaise, Dijon mustard, salt, and black pepper. Mix well until smooth and set aside.

    Prepare the Beef Tartare

    In a mixing bowl, combine the finely chopped beef tenderloin, egg yolk, capers, cornichons, and fresh parsley. Season with salt and black pepper to taste. Mix gently until all ingredients are well combined.

    Prepare the Feuille de Brick

    Preheat the oven to 180°C (350°F). Place the feuille de brick sheets on a baking tray and lightly brush them with oil. Bake for about 5-7 minutes until golden and crispy. Remove from the oven and let cool.

    Assemble the Dish

    Place a generous portion of the beef tartare mixture on each plate. Drizzle the beet aioli around the tartare. Serve with crispy feuille de brick on the side for scooping.
