Preheat your oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices. Arrange the slices on a baking sheet.

Bake in the preheated oven for about 8-10 minutes, or until golden and crispy. Remove from the oven and let cool slightly.

Whip the Ricotta
In a mixing bowl, combine the ricotta cheese, honey, lemon zest, and fennel pollen. Using a hand mixer or a whisk, whip the mixture until smooth and creamy.

Taste the whipped ricotta and season with Sicilian sea salt and black pepper to your liking. Mix again to incorporate.
