Preparing the Fries
Cutting the Potatoes
Wash and peel the potatoes. Cut them into thin strips to make fries.
Soaking the Potatoes
Soak the cut potato strips in cold water for at least 30 minutes to remove excess starch.
Frying the Potatoes
Add the soaked potatoes to the hot oil in batches. Fry until golden and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.
Seasoning the Fries
Sprinkle the hot fries with salt and black pepper to taste.
Assembling the Sandwich
Cooking the Chicken Cutlets
Cook the chicken cutlets in a skillet over medium heat until golden brown and cooked through, about 5-7 minutes per side.
Melting the Mozzarella
In the last minute of cooking, place the mozzarella slices on top of the chicken cutlets and cover the skillet to melt the cheese.
Preparing the Chilies
Slice the Italian chilies thinly. Adjust quantity based on desired spice level.
Assembling the Sandwich
On one slice of bread, spread a generous amount of tomato aioli. Layer the melted chicken cutlet with mozzarella, fresh arugula, and sliced chilies. Top with another slice of bread.
Serving
Serve the sandwich with a side of crispy fries.
