Method

Meatballs

1

Prepare Meatball Mixture

In a large bowl, combine the ground beef, ground pork, bread crumbs, ricotta cheese, parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.

2

Shape Meatballs

Using your hands, shape the mixture into meatballs about the size of a golf ball (approximately 2 inches in diameter). Place them on a parchment-lined baking sheet.

3

Bake Meatballs

Preheat the oven to 400°F (200°C). Bake the meatballs for 20-25 minutes, or until cooked through and browned.

Red Sauce

4

Sauté Aromatics

In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional 1 minute.

5

Add Tomatoes and Seasoning

Pour in the canned crushed tomatoes, and add oregano, basil, salt, black pepper, and sugar. Stir to combine and bring to a simmer.

6

Simmer Sauce

Allow the sauce to simmer on low heat for about 20 minutes, stirring occasionally. Add fresh basil just before serving.

Focaccia

7

Prepare Dough

In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Make a well in the center and add yeast mixture and olive oil.

8

Knead Dough

Mix until a dough forms and then knead on a floured surface for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.

9

Shape and Bake Focaccia

Preheat the oven to 425°F (220°C). After rising, punch down the dough and spread it onto a greased baking sheet. Dimple the surface with your fingers, drizzle with olive oil, and sprinkle with salt and chopped rosemary. Bake for 20-25 minutes until golden.
