Preparation of Vegetables
Marinate the Portobello Mushrooms
In a bowl, combine 1 tablespoon of olive oil, salt, and black pepper. Add the portobello mushrooms and coat them well. Let them marinate for at least 15 minutes.
Prepare the Other Vegetables
Slice the tomatoes and red onion into thin rounds and set aside.

Assembling the Panini
Assemble the Panini
On one slice of focaccia, layer the grilled portobello, grilled tomatoes, and grilled red onions. Top with fontina cheese, then place the second slice of focaccia on top.
Cooking the Panini
Grill the Panini
In a grill pan or sandwich press, heat the remaining tablespoon of olive oil over medium heat. Place the assembled panini in the pan and grill for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
Serving
Serve with Fries
While the panini is grilling, prepare the fries according to package instructions. Once the panini is done, slice it in half and serve it hot alongside the fries.
