Prepare the Tuna
Season the tuna steaks with salt and black pepper on both sides. Set aside.

Wrap the Tuna
Place 2 slices of prosciutto on each tuna steak, followed by 4 sage leaves on top of the prosciutto, ensuring the tuna is well covered. Repeat for all steaks.

Sear the Tuna
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, carefully place the wrapped tuna steaks in the skillet. Cook for 2-3 minutes on each side until the prosciutto is crispy and the tuna is cooked to your desired doneness.

Make the Brown Butter Vinaigrette
In a separate small saucepan, melt the butter over medium heat. Continue cooking until it turns a golden brown color and smells nutty. Remove from heat and stir in the balsamic vinegar until well combined.

Plate the Dish
Remove the tuna from the skillet and let it rest for a minute. Slice the tuna steaks into thick pieces and arrange them on a serving platter.
