    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Clean and Prepare Mushrooms

    Gently clean the Portobello mushrooms with a damp paper towel to remove any dirt. Remove the stems and gills from the mushrooms.

    Season Mushrooms

    Brush the mushrooms with olive oil and season with salt and black pepper. Place them gill-side up on a baking sheet.

    Cook Sausage

    In a skillet over medium heat, cook the fennel sausage until browned and fully cooked, breaking it apart with a spatula as it cooks. This should take about 5-7 minutes.

    Prepare Stuffing Mixture

    In a large bowl, combine the cooked sausage, diced fresh mozzarella, halved cherry tomatoes, chopped basil, breadcrumbs, grated Parmesan cheese, minced garlic, and red pepper flakes. Mix well until all ingredients are evenly combined.

    Stuff the Mushrooms

    Spoon the stuffing mixture into each Portobello mushroom cap, pressing it down gently to pack it in.

    Bake Stuffed Mushrooms

    Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the tops are golden brown and the mushrooms are tender.
