Method
Prepare the Gravy
Collect Turkey Drippings
After roasting your turkey, pour the drippings from the roasting pan into a measuring cup. Allow it to sit for a few minutes for the fat to rise to the top. Skim off about 1/4 cup of the fat and reserve it for the gravy.
Sauté Vegetables
In a medium saucepan over medium heat, melt the reserved turkey fat and unsalted butter. Add the finely chopped onion and sauté for about 5 minutes, or until the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
Add Broth
Gradually whisk in the chicken or turkey broth, ensuring there are no lumps. Continue to whisk until the mixture is smooth.
Season the Gravy
Add the turkey drippings, salt, black pepper, dried thyme, and bay leaf to the saucepan. Stir to combine and bring the mixture to a simmer.
Thicken the Gravy
Allow the gravy to simmer for about 10 minutes, stirring occasionally until it thickens to your desired consistency. If the gravy is too thick, add a little more broth to thin it out.
Finish and Serve
Remove the bay leaf, taste, and adjust seasoning if necessary. Serve the gravy warm, drizzled over your roasted turkey or as a dipping sauce for your subs.
