Calamari Preparation

Prepare the Calamari
In a bowl, combine semolina flour, salt, and black pepper. Dredge the calamari rings in the flour mixture, shaking off any excess.

Heat Oil for Frying
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the calamari rings to the hot oil in batches, frying for about 2-3 minutes until golden brown. Remove and drain on paper towels.

Add Tomatoes and Seasonings
Add canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
Citrus Aioli

In a bowl, whisk together mayonnaise, lemon juice, lime juice, minced garlic, and salt until smooth. Adjust seasoning to taste.
