Roasting the Chicken

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Chicken
Remove the giblets from the chicken cavity and pat the chicken dry with paper towels.

Season the Chicken
Rub the chicken all over with olive oil, then season generously with salt, black pepper, garlic powder, onion powder, and minced fresh rosemary. Place the lemon, cut in half, inside the cavity of the chicken.

Roast the Chicken
Place the chicken breast-side up in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Rest the Chicken
Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Preparing the Salsa Verde

Combine Ingredients
In a food processor, combine fresh parsley, fresh cilantro, garlic cloves, capers, lemon juice, olive oil, salt, and black pepper.

Blend the Salsa Verde
Pulse until the ingredients are finely chopped and well combined. Adjust seasoning to taste.

Serve
Transfer the salsa verde to a serving bowl and serve alongside the roasted chicken.
