Dry the Potato Slices
Spread the potato slices on a clean kitchen towel or paper towels and pat them dry to remove as much moisture as possible. This helps them to become crispier when fried.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can use a thermometer to ensure the right temperature.

Fry the Potato Slices
Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry the slices for about 3-4 minutes or until they turn golden brown and crispy.

Remove and Drain
Using a slotted spoon, remove the fried potato chips from the oil and place them on a plate lined with paper towels to drain excess oil.

While the chips are still hot, sprinkle them generously with salt, pepper, and paprika to taste. Toss gently to ensure even coating.
