Method

Preparation

  1. 1

    Slice the Potatoes

Wash and peel the potatoes. Using a sharp knife or a mandoline slicer, cut the potatoes into thin slices, about 1/8 inch thick. Rinse the slices in cold water to remove excess starch.

  2. 2

    Dry the Potato Slices

Spread the potato slices on a clean kitchen towel or paper towels and pat them dry to remove as much moisture as possible. This helps them to become crispier when fried.

  3. 3

    Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can use a thermometer to ensure the right temperature.

Frying

  1. 4

    Fry the Potato Slices

Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry the slices for about 3-4 minutes or until they turn golden brown and crispy.

  2. 5

    Remove and Drain

Using a slotted spoon, remove the fried potato chips from the oil and place them on a plate lined with paper towels to drain excess oil.

  3. 6

    Season the Chips

While the chips are still hot, sprinkle them generously with salt, pepper, and paprika to taste. Toss gently to ensure even coating.

Serving

  1. 7

    Serve

Transfer the chips to a serving bowl and enjoy them as a side with your favorite sub or on their own as a tasty snack.
