Cooking the Pasta

Boil Water
In a large pot, bring salted water to a rolling boil over high heat.

Cook Pasta
Add the radiatore pasta to the boiling water and cook according to the package instructions, usually about 10-12 minutes, until al dente.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water. Then, drain the pasta and set aside.
Preparing the Sauce

Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

Add Miso
Stir in the white miso paste, mixing well with the mushrooms and garlic. Cook for an additional 1-2 minutes to warm the miso.

Combine with Pasta
Add the cooked radiatore pasta to the skillet along with a splash of reserved pasta water (start with 1/4 cup). Toss everything together, adding more pasta water as needed to create a smooth sauce.

Season
Season with salt and black pepper to taste. Continue to toss until the pasta is well coated with the sauce.
Finishing Touches

Add Truffle and Cheese
Finely shave the fresh black truffle over the pasta and sprinkle with grated Parmesan cheese. Toss gently to combine.

Plate the radiatore pasta, garnishing with additional black truffle shavings and Parmesan if desired. Enjoy immediately!
