Prepare the Coleslaw

Combine Ingredients
In a large mixing bowl, combine the shredded green cabbage and shredded carrots.

Make the Dressing
In a separate small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and black pepper until smooth.

Mix the Coleslaw
Pour the dressing over the cabbage and carrot mixture. Stir until all the vegetables are evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Assemble the Sandwich

Prepare the Bread
Lay out the four slices of whole grain sandwich bread on a clean surface.

Add Dressing
Spread 2 tablespoons of Russian dressing on two slices of bread and 1 tablespoon of vegan mayonnaise on the other two slices.

Layer the Filling
On the two slices with Russian dressing, layer 4 ounces of plant-based turkey slices, followed by 2 slices of provolone cheese.

Add a generous amount of coleslaw on top of the cheese layer.

Top with the remaining slices of bread (with mayonnaise) to close the sandwich.
