Pasta Preparation

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente, usually about 9-11 minutes.

    Reserve Pasta Water

    Before draining the pasta, reserve about 1 cup of the pasta cooking water. Then, drain the pasta and set aside.

Pesto Preparation

    Make the Pesto

    In a food processor, combine the fresh basil leaves, pine nuts, garlic cloves, and Parmesan cheese. Pulse until finely chopped.

    Emulsify the Sauce

    With the food processor running, slowly drizzle in the olive oil until the mixture is well combined and smooth. Season with salt to taste.

Table Side Experience

    Prepare the Parmesan Wheel

    At the table, take the Parmesan wheel and using a knife, hollow out the center slightly to create a bowl for mixing the pasta.

    Combine Pasta and Pesto

    Add the drained bucatini pasta directly into the hollowed-out Parmesan wheel. Pour in the pesto sauce and a little bit of the reserved pasta water. Toss gently to combine, allowing the pasta to absorb the cheese's flavor.

    Serve

    Plate the pasta for two, ensuring a generous amount of pesto and Parmesan is mixed in. Top with extra grated Parmesan before serving.
