Prepare Vegetables
Wash and chop the seasonal vegetables (spinach, cherry tomatoes, mushrooms, and bell pepper) into small pieces. Set aside.

Prepare Herbs
Finely chop the fresh herbs (basil and chives) and set aside.
Mixing the Egg Mixture

Beat Eggs
In a mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk together until well combined and slightly frothy.
Cooking the Omelette

Heat the Pan
Place a non-stick skillet over medium heat. Allow it to heat up for a couple of minutes.

Cook Vegetables
Add the chopped vegetables to the skillet and sauté for about 3-4 minutes until they are tender.

Pour Egg Mixture
Pour the beaten egg mixture over the sautéed vegetables. Gently stir with a spatula to distribute the vegetables evenly.

Add Cheese and Herbs
If using, sprinkle the feta cheese or grated parmesan cheese over the top along with the chopped herbs.

Plate the Omelette
Once the omelette is cooked, gently slide it onto a serving plate. You can fold it in half or leave it open-faced.

Garnish with additional fresh herbs or a sprinkle of cheese, if desired. Serve warm and enjoy!
