Preparation

    Prepare the Steak

    Take the New York Strip Steak out of the fridge and let it come to room temperature for about 30 minutes. This helps to ensure even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt, black pepper, and garlic powder. Pat the seasoning into the meat for better adherence.

Cooking

    Heat the Pan

    In a large cast-iron skillet or heavy pan, heat the olive oil over medium-high heat until shimmering but not smoking.

    Sear the Steak

    Once the oil is hot, carefully place the steak in the pan. Sear for about 4-5 minutes on one side without moving it, until a golden-brown crust forms.

    Flip the Steak

    Using tongs, flip the steak and sear the other side for another 4-5 minutes for medium-rare. Adjust cooking time for your preferred doneness.

    Optional Baste

    If desired, add a tablespoon of butter and a sprig of fresh rosemary to the pan during the last minute of cooking. Tilt the pan and use a spoon to baste the melted butter over the steak.

Resting and Serving

    Rest the Steak

    Remove the steak from the pan and place it on a cutting board. Let it rest for 5-10 minutes to allow the juices to redistribute.

    Slice and Serve

    Slice the steak against the grain into thick slices. Serve immediately with your choice of sides.
