Prepare the Coffee Cannoli Cream

    Mix the Ingredients

    In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and cooled espresso. Mix until smooth and creamy.

    Add Chocolate Chips

    Fold in the mini chocolate chips gently to maintain their shape.

    Chill the Cream

    Cover the bowl with plastic wrap and refrigerate the coffee cannoli cream for at least 30 minutes.

Prepare the French Toast

    Whisk the Egg Mixture

    In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

    Dip the Bread

    Heat a skillet over medium heat and add 1 tbs of butter. Dip each slice of espresso brioche bread into the egg mixture, allowing it to soak for a few seconds on each side.

    Place the soaked bread in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Add more butter as needed.

Assemble the Dish
