Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and mushrooms. Sauté for about 5 minutes until they are softened and the onions are translucent.

Cook Impossible Meat
Add the 1 pound of Impossible meat to the skillet with the sautéed vegetables. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Cook for about 5-7 minutes, stirring frequently until the meat is browned and heated through.

Melt Cheese
Once the Impossible meat is cooked, reduce the heat to low. Place 2 slices of white American cheese on top of the meat mixture. Cover the skillet with a lid to help melt the cheese for about 2-3 minutes.

Prepare the Rolls
While the cheese is melting, slice the sub rolls open lengthwise without cutting all the way through. Lightly toast them if desired.

Once the cheese has melted, divide the cheesesteak mixture evenly among the prepared sub rolls. Add any additional toppings if desired, and close the rolls.
