Method

Marinated White Beans

    Prepare the Beans

    In a medium bowl, combine the canned white beans, olive oil, red wine vinegar, minced garlic, chopped parsley, salt, and black pepper. Mix well to coat the beans evenly.

    Marinate

    Cover the bowl and let the beans marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.

Crispy Prosciutto

    Bake the Prosciutto

    Preheat the oven to 400°F (200°C). Place the prosciutto slices on a baking sheet lined with parchment paper. Bake for about 10-12 minutes, or until crispy. Remove from the oven and let cool.

Gorgonzola

    Prepare the Gorgonzola

    Crumble the Gorgonzola cheese into small pieces and set aside for serving.

Roasted Garlic and Tomato Dressing

    Roast the Garlic

    Wrap the whole garlic cloves in aluminum foil and roast them in the oven at 400°F (200°C) for about 20 minutes, or until soft. Remove from the oven and let cool.

    Make the Dressing

    In a blender, combine the chopped Roma tomatoes, roasted garlic (squeezed out of the skins), olive oil, balsamic vinegar, salt, and black pepper. Blend until smooth.
