Turkey Preparation

Prepare the Turkey
Preheat your oven to 325°F (165°C). Rinse the whole turkey under cold water and pat dry with paper towels.

Season the Turkey
In a small bowl, mix together olive oil, salt, black pepper, garlic powder, onion powder, fresh thyme, and fresh rosemary. Rub this mixture all over the turkey, including under the skin and inside the cavity.

Roast the Turkey
Place the turkey breast side up on a roasting rack in a roasting pan. Roast in the preheated oven for approximately 3 to 4 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey every hour with the drippings.

Rest and Shred the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before shredding the meat with forks into bite-sized pieces.

Prepare the Bread
Toast the slices of bread if desired for extra crunch.

Assemble the Sandwich
On one slice of bread, spread a generous layer of mayonnaise. Layer with shredded turkey, followed by provolone cheese, lettuce leaves, tomato slices, and onion slices.

Top with another slice of bread, cut in half if desired, and serve immediately.
